The wildfires ripped through Minnesota, devastated, displaced many families by destroying homes.
2 sticks unsalted butter

This is perfect for celebrating the holiday, as a side dish, vegetarian meal or anytime.
I used boil in a bag rice, but you can use instant or regular rice if desired.
I used cherry tomatoes but you can use a chopped Roma tomato instead.
I used poblano pepper but you can use a cubanelle or a jalapeno pepper instead.
1/2 c. each: chopped onion, chopped tomato
1 clove crushed & chopped garlic.
2 - 3 T. olive oil
1/8 - 1/4 c. diced pepper
1/4 tsp. each: salt, pepper
Pinch each: red pepper flakes, dried parsley
1 - 2 bags of boil in a bag rice.
2 c. chicken stock
Peel, rinse, chop onions.
Rinse, chop tomatoes.
Peel, rinse, crush chop garlic.
Rinse, seed, chop pepper.
Preheat skillet to medium heat, add oil.
Add tomatoes, onions, garlic, salt, pepper, red pepper flakes, peppers, sauté for a few minutes.
Snip bag of rice with scissors and pour into skillet.
Stir rice with a wooden spoon and sauté rice for a few minutes to toast.
Lower heat to medium low.
Open can of chicken broth, add broth to rice 1/2 c. at a time.
Add parsley and stir rice.
Turn off heat when rice's finished cooking.
Serves 4.

What’s a better way to watch the Masters than enjoying ice cream
2 - 3 c. heavy cream
1/2 tsp - 1 tsp. salt
1/8 - 1/3 c. sugar
1 tsp. each: vanilla extract, peppermint extract
Green food coloring
In 4 clean jars combine most of ingredients.
Add some of the peppermint extract to each of the jars.
You can adjust the amount used.
Add a couple of drops of green food coloring in each of the jars.
Screw lid on jars and shake jar for 4 - 5 min.
Place jar in freezer to chill for a few hrs.
Serves 4.

I've used granulated sugar, but you can also use dietetic or powdered sugar works too.
1 c. heavy whipping cream
1/4 - 1/2 tsp. vanilla extract
1/4 tsp. peppermint extract
2 - 3 drops green food coloring
1/2 - 1 tsp. sugar
In a mixing bowl combine ingredients.
Use a hand mixer to whip cream for 3 - 5 minutes or until desired consistency.
Serves 4 - 8.

2 cans light tuna
1/4 tsp. each salt, pepper
Non stick cooking spray
1 package egg noodles
1 can each: mixed vegetables, cream of mushroom soup
1/2 c. each: bread crumbs, milk
1 c. shredded cheese
Preheat oven to 375 F'
Spray baking pan with non stick spray
Fill pot with cold water, place on stove & bring to boil.
Add noodles, half of the salt to the water, cook according to package instructions.
While noodles are cooking, open tuna and mixed vegetables can, drain cans.
When noodles are finished, turn off stove burner, drain noodles in a colander.
When noodles are drained, pour noodles in mixing bowl.
Add tuna and mixed vegetables to noodles.
Open can of soup, pour into bowl over noodles.
Pour milk into soup can and pour over noodles.
Sprinkle cheese, rest of salt, pepper over noodles, mix with a wooden spoon or spatula.
Pour noodle mixture into baking pan, top with remaining cheese, bread crumbs.
Place baking pan in oven and bake for 20 - 30 min. or until done.
Serves 6 - 8.
This is perfect for the weekend or anytime.
This is perfect to serve along Chinese food, as a dipping sauce or anytime.
I've used brown sugar, but you can use honey if needed.
If you're using, honey, you can omit the cornstarch.
You can also adjust the amounts used to taste.
1/8 - 1/4 c. pineapple juice
1 T. apple cider vinegar
1/8 c. brown sugar or honey
1/2 - 2 T. ketchup
1/2 - 1 tsp. low sodium soy sauce
1/4 tsp. each: salt, pepper
1/8 - 1/4 tsp. cornstarch
In a measuring cup, combine ingredients.
Stir with a clean fork.
Cover with plastic wrap and place in refrigerator to thicken.
Serves 4 - 6.
