Holiday Roast

 This is a great recipe for the holidays or anytime.


5 lb. beef roast
1/4 tsp. each: salt, pepper
1 - 2 cloves fresh garlic crushed, chopped
1/3 c. each: dry red wine, cold water
1/8 c. olive oil
1 onion peeled and quartered
10 pepperoncini peppers


Preheat oven to 350 F'.

Peel, rinse, cut onions. 

Peel, crush and chop garlic.

Remove roast from refrigerator and place in a roasting pan. 

Pour some of the wine and oil over roast. 

Make some tiny slits all over roast. Stuff slits garlic.

Sprinkle half of the seasonings over roast.

Turn roast over. 

Pour some of the wine, oil over other side of roast. Repeat prior process with garlic and seasonings.

Pour rest of wine and water in bottom of pan.

Add peppers and onions to pan. 

Place pan in oven and cook for 2  1/2 hrs . approx or until done.

Remove roast from oven and cover with the foil to keep warm. 

Let rest for a few minutes before carving.

Serves 6.

Recipe To Help Tennessee

Prayers, thoughts for the residents of Tennessee as they continue to clean up from a tornado that struck the state earlier this month. 

The tornado devastated many and 6 lives were lost.

End of Fall Fried Apples

This is perfect for fall or anytime.


2 apples sliced 
2 - 3 T. butter 
1 - 2  T. sugar, adjust to taste
1/4 tsp. ground cinnamon

Cut apple in half, remove core, cut apple into slices.

Heat saute pan to medium high heat.

Reduce heat to medium, add butter. 

Add apples to pan and brown on one side for 3 - 5 min. approx.  

Sprinkle some of cinnamon and sugar over fruit. 

Turn over apples, repeat cooking process with remaining sugar and cinnamon.

Serves 4.

Big Game Pasta Salad

 Michigan’s playing this week in the Big Ten Championship game.

This is perfect for your game watching party, a holiday get together or anytime

4 qt. water
1 package pasta shells (16 oz)
1/2 c. each: chopped bell pepper, chopped onions, chopped celery 
1/ 2 - 3/4 c.  mayo
 (to taste) 
1/8 c. cocktail olives (sliced)
1/4 tsp. each: black pepper, salt, granulated garlic


Bring water to boil in a pot, add some of the salt, and carefully add pasta.

Cook pasta according to directions on package.

While pasta is cooking, peel, rinse, chop onions.

When pasta is done, carefully drain water from pasta and rinse pasta with cold water through strainer if desired.

Rinse, seed, chop peppers.

Rinse, cut ends from, chop celery.

Chop olives.

In a large serving bowl combine: drained pasta, remaining ingredients and mayo.

Toss well to coat.

Place in refrigerator to chill until ready to serve.

Serves 4 - 6.
