Hot Honey Popcorn

 This is perfect for game night, movie night or anytime.


1 bag microwave popcorn

1/8 tsp. each: red pepper flakes, hot sauce, black pepper 

1 T. honey

1/4 - 1/3 c. butter


Microwave popcorn according to package instructions.

While popcorn’s cooking, preheat pot to medium heat. 

Lower heat to low, add butter until melted.

When butter’s melted, add honey, pepper, pepper flakes and hot sauce. 

Stir butter for 1 - 2 min. with a clean rubber scraper or a clean wooden spoon. 

When popcorn’s popped, carefully remove it from microwave and pour into a bowl.

Turn stove off,  let butter cool for a few seconds and very carefully pour butter over popcorn.

Serves 2 - 4.

Mad About Buffalo Sauce

This is perfect for watching March Madness, the World Baseball Classic, game day or anytime.

You can adjust the amount of hot sauce used.

1/2 c. (1 stick unsalted butter)
1/8 - 1/3 c. hot sauce
1 clove garlic, crushed, chopped 
1/4 tsp. each: salt, pepper
1/8 tsp. vinegar
Pinch red pepper flakes 

Peel, crush and chop garlic.

Heat a saucepan to medium, lower heat to medium low or low.

Combine ingredients in pan and stir sauce with a whisk for 3 - 5 min. or until butter has melted.

Remove pan from heat, let cool for a bit for pouring into a bowl.

Serves 4 - 6.

Chili Totchas

This is perfect for watching March Madness or anytime.

16 - 24 oz. frozen tater 16 - 24 oz

Non stick cooking spray
1 can 2 c. approx. prepared chili 
1 - 1 1/4 c.  lite shredded cheddar or colby cheese

Preheat oven to 450' F.

Spray a baking sheet with nonstick cooking spray.

Arrange tater tots on baking sheet, put tots in oven and bake for 30 min. or until golden brown. 

Halfway through cooking, remove pan from oven and flip tots over if possible to cook on other side. 

While tots are cooking, pour chili into a microwave safe bowl. 

Microwave  2 - 3 min. or until heated. 

Remove tots from oven and place on a plate.

Spoon chili over the tots.

Sprinkle cheese over the tots and place in the microwave. 

Microwave on high for 1 - 2 minutes or until cheese melts.

Serves 4 - 6.

March Into Spring Madness Meatballs

Welcome spring!

This is perfect for a March Madness watching party, watching the home opener, dinner or any time.

1 lb. lean ground turkey
1/8 - 1/4 tsp. each: salt, pepper, dried or fresh parsley
Pinch red pepper flakes
1 clove chopped and crushed garlic
1 egg (cage free) or egg substitute
1/8 - 1/4 c. each: bread crumbs, diced onion, bell peppers, low fat milk
1 - 3 T oil
dash of hot pepper sauce.

Set aside oil.

In a mixing bowl combine remaining ingredients. 

Mix well with clean hands. Form meat mixture into 16 meatballs. 

Preheat skillet to medium high heat. Lower heat to medium, add oil.

Place meatballs in pan and brown on 1 side for 6 - 10 min approx.

Turn meatballs over and cook for 6 - 10 min. more or until done.

To serve: 

Insert a clean toothpick into meatballs and serve alongside your favorite dipping sauce.

Serves 4.
