Soft Cooked Eggs

I’ve never tried a soft cooked egg until last year. 

This is great for breakfast or anytime.


2 eggs
Water
1/8 - 1/4 tsp. each: salt, pepper


Turn on faucet to cold water to run for a few seconds.

Put some cold water in a saucepan enough to cover eggs. 

Place sauce on burner, turn on stove and bring water to a boil.

When water begins to boil, reduce heat.

With a clean ladle or slotted spoon, very carefully place eggs in the water.

Cook eggs for 5 minutes.

After 5 minutes, turn off stove and with a clean slotted spoon, carefully remove eggs and run egg under cool water for a few seconds.

Place eggs on a clean plate, crack eggs open with a clean butter knife. 

Sprinkle some salt & pepper over eggs.

Serves 1.

Easy Does It Eggs

This perfect for breakfast or anytime.

2 eggs
2 T. butter
1/8 - 1/4 tsp. each: salt, pepper

Heat a skillet over medium-high heat lower heat to medium and add butter.

Crack eggs on edge of pan and put eggs in pan.

Cook eggs on one side for 2 to 3 minutes. 

Sprinkle eggs with salt, pepper.

Flip eggs over and cook another side for 2 to 3 minutes more or until done.

Remove eggs from pan and put onto a clean plate.

Serves 1.

Easy Huevos Rancheros™

This is an easy recipe for breakfast or anytime. 

8 each: corn tortillas, eggs
1/8 - 1/4 tsp each: salt, pepper
1 c. prepared salsa
1 can drained, black or pinto beans
2 - 5 T. oil (adjust amount needed)
1 clove garlic crushed, chopped
2 - 3 T. butter

Peel, crush and chop garlic. 

Place beans, garlic in a microwave safe bowl. Toss with some of the oil, salt, pepper. Cook for 1 - 2 min.

Preheat sauté pan to medium high heat. Lower heat, add some of the oil. Fry tortillas on 1 side for 1 - 3 min. Turn tortilla over and fry on other side for 1 - 3 min. more or until crisp. Repeat process with remaining tortillas. Transfer to a plate.

Remove bowl with the beans from microwave. Cover bowl with a small plate to keep warm.

Add butter to pan. Crack 2 eggs into pan. Sprinkle with some salt and pepper. Cook for 1 - 2 min until desired doneness. Repeat process with remaining eggs. Add more butter if needed. 

To serve: Place 2 tortillas on a plate. Top each tortilla with an egg. Spoon some of the beans on the plate. Spoon some of the salsa over eggs. 

Serves 4.

Express Eggs™

This is an excellent idea for a very quick breakfast or anytime. Feel free to use what fillings desired. 

2 eggs 
1 - 2 T butter (enough to coat bowl)
1/8 - 1/4 tsp each: salt, pepper
1/4 tsp dried parsley
1 clove garlic crushed diced
1/2 - 1 tsp each: shredded cheese, diced bell pepper, diced onion, diced tomato

Grease a microwave safe bowl with the butter. Crack 2 eggs in bowl and stir with a fork for 10 - 15 seconds. Add salt, pepper, garlic, parsley, cheese and vegetables.

Place bowl in microwave and microwave for 70 - 90 seconds or until done. 

Serves 1.

Deviled In Disguise Eggs ™

This is my version of deviled eggs.  Feel free to experiment and use what you like.


Hard cooked eggs

1 dozen eggs
6 cups cold water


Filling

12 hard cooked eggs yolks
4 - 6 T (1/4 c approx.) reduced fat mayonnaise
1/8 - 1/4 tsp each: salt, pepper
1/8 tsp each: granulated garlic, dried parsley, paprika
1 tsp each: diced red onion, mustard
1/8 tsp. dried dill (optional)


Hard cooked eggs

In a saucepan place eggs. Add enough water to cover eggs. Bring pan to a boil. Once water starts to boil, cover pan with a lid and turn off heat. Leave pan covered for 15 min. Remove eggs from water after 15 min. Let cool before peeling. Peel eggs and cut eggs in half lengthwise. 


Filling

Scoop eggs yolks out carefully. In a mixing bowl combine eggs yolks, mayo, salt, pepper, garlic, parsley, onion, mustard, dill. Mash yolks well with a fork until blended. 

Scoop yolks into egg whites. Sprinkle paprika over eggs. Let chill in refrigerator until ready to serve.

Serves 6 (4 egg halves).

Royal Treatment Frittata ™

You don't have to be royalty to eat like one.


This is great for brunch or even a light supper.  Once you've mastered this recipe you can use the fillings you like. You can even make this vegan by using egg substitute. 

8 eggs
1-2 oz. approx. each: chopped bell peppers, chopped tomatoes, chopped onions, sliced mushrooms,
diced cheese, diced ham
non- stick cooking spray
1 clove garlic chopped
1/8 tsp salt (optional)
1/4 tsp ground pepper
1/2 tsp dried or fresh parsley



Crack eggs into mixing bowl.  Whisk eggs well for 10-20 seconds.


Add chopped vegetables, salt, pepper, cheese, garlic, parsley, ham and cheese to eggs.


Preheat oven to broil.


Spray skillet with non- stick cooking spray and heat to medium high.  Lower heat to medium, add eggs and cook for 5-7 minutes or until it just starts to set.


Place pan in oven and broil for 5- 7 minutes. Remove pan from oven with pot holders or oven mitt.  


Cut frittata into 4  wedges.


Serves 4.

Kitchen Sink Omelette ™

I call this recipe Kitchen Sink Omelette because I put everything but the kitchen sink in it!

This is a great basic recipe for breakfast or anytime. Feel free to experiment and add the fillings that you like. You can also make this recipe with egg whites and without the ham too.


1-2 T butter
2 eggs
1 T each: diced mushrooms, diced bell pepper, sliced scallions, diced ham, shredded cheddar cheese,
2 cherry tomatoes halved (you can use grape tomatoes)
1/4 tsp pepper
1/8 tsp salt (optional)

1 small clove diced crushed garlic

Crack eggs over a small mixing bowl, beat well (10-15 seconds).


Add remaining ingredients to eggs.

In a medium skillet heat butter on medium high heat. Add egg mixture.

Gently push egg mixture from side of pan. Cook on one side for 2-3 minutes. Flip omelette over to cook on other side for 2-3 min or until done.

Makes 1 serving.
