Turkey Sliders

 This is perfect for leftovers or anytime 

4 oz. cheddar cheese

8 oz. cooked turkey meat

8 dinner rolls 

Nonstick cooking spray

2 T. mustard

Cut dinner rolls in half.

Preheat skillet to medium high heat, lower to medium low, spray nonstick spray in skillet. 

Place bread side of dinner rolls on pan to toast for a minute.

While bread is toasting, divide meat and cheese into pieces. 

Remove rolls from pan and arrange meat and cheese on 8 halves of the rolls. 

Smear mustard with a clean knife on sandwiches. 

Place other halves of rolls on top and place sandwiches in pan for 1 - 2 min. to melt cheese on 1 side. 

Flip sandwiches over to toast on other side for 1 - 2 min. or until done. 

Serves 4.

Side Dish Sweet Potatoes

This is a perfect side dish for Thanksgiving or anytime.

2 - 3 sweet potatoes chopped

Non stick cooking spray

1/4 tsp. each: salt, pepper, ground cinnamon 

1/2 - 1 tsp. brown sugar

Preheat oven to 350 F'. 

Spray baking sheet with non stick spray.

Rinse, chop sweet potatoes. 

Arrange sweet potatoes on baking sheet.

Sprinkle salt, pepper, cinnamon, brown sugar over potatoes and place oven to cook for 30 minutes.

Halfway through cooking, remove baking sheet from stove and stir potatoes.

Place baking sheet back in oven to finish cooking potatoes until done.

Serves 4.

Thai Oven Pork Chops

 This is perfect for fall or anytime.

1 lb. pork chops

1/4 tsp. each: salt, pepper, granulated garlic

1/8 tsp. red pepper flakes

nonstick cooking spray 

1 T. each: sesame oil, lime juice

2 - 3 T. low sodium soy sauce

Preheat oven to 350 F. 

Spray baking sheet with non stick spray

Arrange pork chops on baking sheet.

Sprinkle salt, pepper, granulated garlic, red pepper flakes over 1 side of pork chops. 

Drizzle sesame oil, lime juice, soy sauce over pork chops. 

Turn pork chops and repeat process.

Place pork chops in oven and cook for 30 min.

Halfway through cooking, remove pork chops from oven, turn pork chops on other side.

Put baking sheet  back in oven and cook pork chops until done.

Serves 4.

Prayers, thoughts for Jamaica and who were in the path of Hurricane Melissa. 

The hurricane devastated Jamaica, claiming 75 lives and caused heavy rain, flooding in Haiti. 

It will take time for the countries to recover.
