This is perfect for Easter or anytime.
1 package 4 c. shredded potatoes
1/2 c. melted unsalted butter
1 onion chopped
1 can cream of mushroom soup
1 package 2 c. shredded cheddar cheese
1 c. reduced fat sour cream
1/8 - 1/4 tsp. each: salt, pepper
1/4 tsp. granulated garlic
Non stick cooking spray

Preheat oven to 350 F.
Spray baking pan or casserole dish with non stick cooking spray.
Remove package of potatoes from freezer, let thaw a few minutes.
Peel, rinse, chop onions.
Combine ingredients in a mixing bowl, mix well.
Pour into baking pan, spread evenly. Place into oven and bake for 1 hr. or until done.
Serves 6 - 8.
